I am creating a catalog with standardshapes, but i'd like to choose between different materials( AISI 316, AISI 329, AlSi1MgT6...) when I'm draging the shape in to the scene. Is this possible with design variations? I've tried but...

Yes. On the part, create a custom property called Material and set a value. In the desing variations, you will now see the custom property in the bottom right. Each variation you can set the value you want for the material property.
